Day 2: vegan salad

I have some romaine heads that are going to be bad soon, so I thought a salad would be perfect for an easy vegan meal. The great thing about salads is that you can put practically anything in there and have it taste good. So that’s what I did.

I pulled out all the ingredients that sounded good in a salad, and I happened to have some bean sprouts leftover from another recipe. It seemed like they would go well with the other ingredients so I tried it. The hardest part for me was finding a dressing that I liked. I love creamy dressings, but vegans don’t eat dairy. Here’s what I came up with.

 

Rainbow Salad

1 head of romaine

Handful of cranberries

Handful of raw sunflower seeds

1 c. bean sprouts

Half a tomato

1 tsp. lime juice

 

Dressing

1 avocado

1 c. water

Salt and pepper to taste

 

I combined everything into my bowl and spritzed lime juice on top. Super simple.

I didn’t end up eating the whole thing because I shared with one of my roommates. It tasted fine, but I wasn’t really impressed with the avocado dressing. Next time I’m going to try a tahini-based dressing that I’ve seen on YouTube.

Regardless of the taste, I felt really good after eating it. I was full for a few hours afterward and that’s pretty impressive considering that I usually get hungry every hour or two. Usually, that’s because I don’t eat until I’m full, just satisfied.
