On day one of this challenge, I decided to keep it simple and start with a smoothie. I love smoothies, and they seem to be a staple for vegans, so I went with it. I threw in some bananas, pitted dates, a little lime juice, and spinach. My blender doesn’t work as well as a Vitamix, so I cut up the dates a little before putting them in the blender.


Simple, green smoothie

Yield: about 2 pints

3 bananas

3 pitted dates

Tbs lime juice

¼ c. Spinach


I haven’t used dates much in my smoothies, but they add so much to the flavor. I used to need to add sugar to make the smoothie sweeter or suck it up and drink a sour/bitter drink. Dates are so sugary that I just add three or four and my sweet tooth is satisfied. This might be different for others, but try out both ways and find what you like.

This was so refreshing. I drank this while listening to a podcast this morning, and it was a great way to start the morning.

However, I’m not the biggest fan of spinach in smoothies. I couldn’t taste it much over the bananas, but I will probably switch it out for kale next time. That’s my personal preference, though.

As far as how I felt after drinking this, it really made me feel energetic and rejuvenated. A lot of it was an emotional help, but I really felt like I could take on the world. I’m definitely going to be drinking smoothies on a regular basis.
